Does anyone know if the later 2.8 engine can be shoehorned into a L300 or are bellhousing and mounts and everything completely different?

Don't bother! Too much work plus, the 4D56t are in my opinion more versatile when well maintained! Again... Personal opinion!
In regards to your question... I have no idea 8-) but someone else knows for sure. I'm sure some OCD Delica maniac tried it already!

Apparently they don't fit. I've not tried it myself but I've heard from other sources that I highly respect that there are spacial issues regarding fitting the 4M40 into the 4D56T bay. Having said that I've seen footage of L300 wagons with a VR4 or V8 in 'em.

One other option:

Falco.

Technically speaking if you can drop a V8 into a L300 you can drop 4M40 (2.8) but the modifications that are needed would make it cost prohibitive.
The 2.8 engine was not designed as a mid-engine mount on such a small platform...it has been used on larger mitsubishi trucks like the Canter Guts or Fuso but not on the L300 or Delica Trucks. There is just NOT enough room between the cab and the front differential/cross member assemblies to slip in this beast of an engine.

But all is not lost!! There are better engine platforms to consider if your original (4D56) 2.5TD is old/tired/broken.

Consider scoring a newer generation 4D56 engine and tranny combo from Japan....the spec's are impressive and there is a high likilehood of OE type bolt-up.
Here's the Run of engine specs' for the many generations of the 4D56. Also known as Hyundai D4BH[16]

Non-intercooled Turbo (TD04 Turbo)
Power - 90 hp (67 kW) at 4,200 rpm
Torque - 197 N·m (145 lb·ft) at 2,000 rpm
Engine type - Inline 4-cylinder SOHC
Fuel system - Distribution type jet pump
Compression ratio - 21:1[14]

Intercooled Turbo (TD04 water-cooled Turbo)
Power - 78 kW (104 hp) at 4,300 rpm
Torque - 240 N·m (177 lb·ft) at 2,000 rpm
Engine type - Inline 4-cylinder SOHC
Rocker arm - Roller Follower type[15]
Fuel system - Distribution type jet pump (indirect injection)
Combustion chamber - Swirl type
Bore x Stroke - 91.1 x 95mm
Compression ratio - 21:1
Lubrication System - Pressure feed, full flow filtration
Intercooler Type - Aluminium Air-to-Air, Top-mounted
Turbocharger - Mitsubishi TD04-09B

Intercooled Turbo (1st Generation DI-D)
Power - 85 kW (114 hp) at 4,000 rpm
Torque - 247 N·m (182 lb·ft) at 2,000 rpm
Engine type - Inline 4-cylinder
Fuel system - 1st Generation Common Rail Direct Injection (CRDi)
Compression ratio - 17:1[14][17][18]

Intercooled Turbo (2nd Generation DI-D)
Power - 100 kW (134 hp) at 4,000 rpm
Torque - 320 N·m (236 lb·ft) at 2,000 rpm
Engine type - Inline 4-cylinder
Fuel system - 2nd Generation Common Rail Direct Injection (CRDi)
Compression ratio - 17:1[14][17][18][19]

BB NOTES: 3rd Gen found in 2011 and newer Mitsu L200/Strada/Triton Truck is the best candidate and it puts out more power/torque than the 4M40!.....you would need to figure out the intercooler location though
Intercooled Turbo (3rd Generation DI-D with variable geometry turbo)
With manual transmission
Power - 131 kW (178 PS) at 4,000 rpm
Torque - 400 N·m (295 lb·ft) at 2,000 rpm
Engine type - Inline 4-cylinder
Fuel system - 2nd Generation Common Rail Direct Injection (CRDi)
Compression ratio - 16.5:1[20]

With automatic transmission
Power - 131 kW (178 HP) at 4,000 rpm
Torque - 350 N·m (258 lb·ft) at 1,800 rpm
Engine type - Inline 4-cylinder
Fuel system - 2nd Generation Common Rail Direct Injection (CRDi)
Compression ratio - 16.5:1[20]

I looked into doing the common rail 4d when Delilahs engine went out her tail pipe... nobody locally would import one for me. Not really sure why couldn't get a straight answer :(
