First oil change

I am sure this has been discussed many times but I am a new owner and about to change the engine oil for the first time. I should mention that I am a professional heavy duty tech and have changed oil hundreds of times.
The engine runs current on 15w40 but I live in Manitoba and it gets cool here in the winter. We use a lot of 0W40 synthetic at the shop. I run it year round in my service Truck with a 6.7 Cummins. Do you guys think that is a good idea? I don't have a oil pressure gauge installed yet. I was thinking of using Shell Rotella T6 or maybe our house brand (New Holland).
I have also been searching for filters. I can get them cheap from Fleetguard (15 for the oil and 21 for the fuel) but I have to take a dozen.
I have been reading about filling the fuel filter with sea foam. I have never heard of that before. Is this safe and is it a good idea?
I know this is boring for you experienced guys.
