Defrost setting fogs all my windows?

Mostly on rainy or humid day, when I set my heating to defrost it ends up fogging all my windows (should be the other way shouldn't it?), even my crystallite. If I put it to upper body air vent then it clears up my windows but then the windshield starts fogging up. This is with the fresh vent on, not the re-circulated one. I've kept the rear heating at the hot setting, doesn't really make a difference if l turn out the fan or not.
Anyone with this issue? If it's anything like newer Honda, keeping the AC would probably solve this issue but I don't want to use AC if I can help it.

Yep, same issue. I was thinking it was the old fresh / re-circulate switch trick, but like you noted, this happens on fresh air. I did move all the fan vents in the back to face the window and turned the air back there on full blast - it help a bit... We were only out on a short trip though so I'm hoping if the inside gets good and warm it will clear up. Does your trouble last on longer trips?

If humid or rainy, time doesn't seem to help too much. It's much worse if I hop in the bus after being out in the rain (wet clothes). When it gets wet again (shouldn't take too long here!) I'll try to figure it out but doesn't look great right now.

It sure sounds like you are recirculating.
You might want to remove the glove compartment and then check that the fresh/recirculate lever actually moves the flap in the heater system. You might even be able to tell by listening, so you don't have to pull the glove compartment. Move the lever and listen for the flap slapping shut.
In a previous vehicle, I had the cable that controlled the heat come off its clip. So although the lever and cable moved, the actual control didn't.
