I guess not having ODB II means scanguage is out but does anyone have something setup to see fuel consumption?

These vehicles have no diagnostic facility except for the person working on it! Your back to the old days of filling the tank and driving and breaking out the calculator i am afraid.

At every fill I write my odometer reading on the back of the receipt, and when I get home I enter the date, odometer reading, price per litre, and number of litres in to a spreadsheet. The spreadsheet then calculates my current, average, highest, and lowest fuel economy in L/100km, MPG (US) and MPG (UK) along with the average price I pay for fuel, the total number of litres I've used, and the total amount I spend on fuel (sometimes the later 2 are figures I'd rather not know!)

Not only does this let me see what my fuel economy is, it also lets me keep track of ongoing trends if something isn't quite in sync. (even if you had an instantaneous readout on the dash, it wouldn't give you ongoing trends, because you'd never know if slightly better or worse economy is due to an engine issue, different weight of your right foot, wind conditions, etc. The only true way to keep track of it is over time)

if you have a I phone or a blackberry, I use an app call Gas Cubby, It logs all your mechanical and fuel costs, has graphs and some other usefull things in it, i have one chart for each vehicle.

There are other options rather than plugging into diagnostics. MPGuino you tap into the fuel injector and speedometer wires, but I think there may be issues with it running on diesels so i was wondering if anyone had other options? I have an app on my iphone for tracking my mileage and it works great for averages but the instant reading is fantastic for hypermiling.

what wires on the mechanical IP or mechanical injectors would work?

You're better off to just get a feel for the vehicle and learn to ease up a bit with your right foot, it's amazing how a little less pressure translates to much better efficiency, lower temperatures, and less smoke, all without affecting the speed of the vehicle.
The gauge really won't give you any more info that you can do anything about.

I can drive efficiently its just nice having visual feedback, I had one on my truck and it was great.

ok, let me rephrase it a bit.

There is no practical way to do this on a Delica. These vehicles are old school diesels. Everything is mechanical. There is no computer. There is no electronic fuel injection. There is no data port of any form.

At a minimum it would require replacing the injection pump/injectors with an electronic system, and there is no ready made replacement.

well you could I guess put flow gauges on the input and return lines to and from the IP, and if you could get something to display the difference of the 2 you might have what your looking for, sounds a bit complicated though.
