Hi french fries fans! (or fans of resulting by-product...)
Before starting any WVO conversion I want to find a few good restaurants to collect my oil. What type of restaurant would be best? I know that the one using frozen food in their deep fryers end up with lot's of water in the oil but unfortunately that's probably most restaurants now a day. Any ideas?

Just use the oil don't eat those nasty spare tire inducing things
. You'll get a kick out of driving with buddies, whom tease you about the french fry van on the drive, yet whom all for some inexplicable reasons admit to craving then ordering french fries and other deep fried junk when you stop to eat on route.
More detailed info on the web but find a place that'll be; is busy and changes there fryers often, willing to accommodate you with regular'n'easy pick up times and places, keep the animal fats separate for you (for exclusivity you may have to dispose of the nasty grease yourself), and ideally close to your regular route. Staying away from the outdoor bulk oil bins, one regular and busy restaurant will be more then enough BTW David.
So when is the lower mainland WVO install/meet scheduled for?

Lot's of busy Chinese restaurants around here, any problem with that type of residuals or better with bugger shacks and all? Animal fat, you mean the solid stuff like lard and all? (stay away from it, right?...)

Mmmm, Chinese restaurant powered Delicas smell so yummy. Seriously!
Chinese restaurant oil in my single experence was fine, but contained a far higher amount of fine particulates, average water, and gratefully contained less sludgy gunk. The sludge is just the thick stuff that settles in a layer below the nice used canola oil, cooperative restaurants have to be taught not to add grill grease to the freshly drained hot fryer oil. Animal fats (lard/tallow) also cook out in the deep fryer too, just wanting to clog your WVO filters like they clog our arteries.
